After Dinner Mints

Oh, fall, how I love thee! Im sure you all feel the same as you sit there sipping your pumpkin spice lattes and cozy up with a book in your favorite wool sweater, or in my case, my favorite sweatshirt. I love fall because for me it is a season of rest. After a busy summer full of parties, weddings, walks, hikes, farmers markets, picnics, travel, swimming, and every other summer activity we could fit in a 17 hour window of sunlight .....I am pooped! Now I find myself craving sleep, comfort food, shorter days, warm fires and a good novel. So to say farewell to my summer garden I picked my last mint leaves, gave them a bath in rich dark chocolate and enjoyed one final taste of the season. Until next year......

After Dinner Mints

  • a handful of fresh mint leaves
  • 4 ounce bar of fine dark chocolate

In a double broiler (if you dont have one of these you can just fill a sauce pan with water and set a heat proof bowl on top so the steam from the pan will heat the bowl) melt as much chocolate as you need. Dip the mint leaves in the chocolate and then place on a plate or cookie sheet with parchment paper. Place in the fridge for at least 30 minutes or until chocolate has hardened. Eat them plain or use as a garnish for a cupcake or piece of cake. Enjoy!

Your recipes are amazing. This one is something I've been searching for so long. I adore "after eights" but they have soy lesitine in it without non GDO certificate. Thank you for sharing all these beautiful things.
