Four Flowers Juice

Well I am off to NYC today today to visit my sister while Jordan is leading a Young Life camp. I am so thankful to take a break from work, and I can't wait to set my eyes on my sweet niece Charlotte. This will probably be my last New York visit for a while since my sister and her fam are moving at the end of the month. So I better make the most of it! Though my trip will be short it wouldnt be complete without going to Sarabeth's. Nestled in the upper west side this delightful hot spot wins me over with their lemon ricotta pancakes and eggs benedict. I love to start my brunch with a tall glass of their famous four flowers juice, named after the four fruits that make up the juice: orange, pinapple, banana and pomegranate. The consistancy of this juice is more like a smoothie minus the ice and it defintely trumps a boring glass of plain OJ.

I recently made this for a bridal shower and it was a hit! I like to make it the night before to allow all the flavors to blend. Enjoy!

Sarabeth's Four Flowers Juice

  • 4 bananas, peeled, cut into chunks
  • 2 cups chilled orange juice
  • 1/2 fresh pinapple, peeled, cored, cut into chunks
  • 1 cup cold filtered water
  • 2 1/2 TBSP pure maple syrup
  • 1 TBSP fresh lemon juice
  • 2-3 TBSP homemade grenadine (this is what gives the juice a rose/pink color) I like to make my own rather than use store bought because they are usually packed with high fructose corn syrup....yuck! But if you want to use store bought you can find it in the "mixers" section which is usually on the fruit juice aisle.
To make your own grenadine combine two cups of pomegranite juice with one cup sugar and bring to a boil and then reduce heat and simmer for about 15 minutes. Turn off heat and allow to cool.

For the juice combine bananas and 1/4 cup orange juice in processor and puree. Transfer to pitcher. Combine pineapple chunks and 1/4 cup orange juice in processor and puree. Transfer to same pitcher. Mix in water, syrup, grenadine, lemon juice and 1 1/2 cups orange juice. (Can be made 6 hours ahead. Chill. Stir well before serving.)

Pour fruit mixture into tall glasses. Garnish with strawberries and serve.
