Watermelon, Feta & Mint Salad

Oh this is my new favorite salad! I know it sounds bizarre to put balsamic vinegar on watermelon but after you've tasted it you'll realize that all these flavors were made to go together. The sweetness of the melon, the tanginess of the balsamic, and the creamy yet mildness of the feta all topped with refreshing mint is just to die for. I think I could eat a huge bowl of this for dinner and be perfectly content.

And for those of you who don't know....it's watermelon season! So go grab a seedless melon and whip this dish up for your family and friends to enjoy :)

Watermelon, Feta and Mint Salad

I was first inspired to make this by my mother so I don't have an actual recipe. Just toss several cups of seedless watermelon cut in cubes with a handful of chopped mint. Sprinkle with feta cheese and drizzle a few tablespoons of balsamic vinegar on top. Toss lightly to incorporate all the flavors. Serve chilled. Enjoy!

My mom made this too! It IS so good. Try adding a little prosciutto sometime...we've done that before and it's delish.
