Corn and Feta Salad with Lime and Garlic Butter

This is my new favorite sittin' on the porch, drinkin' a cold one, watchin' the sunset type of snack.  I know the title sounds odd but believe me all the flavors meld together perfectly and after one bite you will ultimately find yourself eating it all. I think I saw Jordan licking the bowl when we were done :)

  Keep it casual and pair it with some corn chips or spruce it up with some flatbread or homemade pita crisp. However you serve this dish it is bound to be a hit!

Corn and Feta Salad with Lime and Garlic Butter

  • 3 ears of white corn, de-kerneled (do NOT use yellow corn or corn from cans)
  • 6 oz crumbled feta (more or less, depending on your preferences. I used a whole package)
  • Juice of one lime
  • 2 tbsp butter, softened
  • 1 clove garlic, minced
  • olive oil

Mix garlic with a pinch of salt and pound to a paste. Stir into butter (this can be done 2 days ahead).
Saute corn kernels on med. high heat in a bit of olive oil. Season with salt and pepper. Once the kernels are golden brown (for the most part) add 1 or both tbsps of butter to skillet and continue cooking for another minute, tossing to coat.
Place corn in serving dish, squirt lime over the top and sprinkle with feta. Toss to mix. Serve warm.
Serves 2.
