Lamb Burgers with Mint & Tsatsiki
Okay so now that you have made your pita bread, it's time to use them! I am a HUGE fan of Greek food so when I stumbled across a recipe for lamb burgers I added it to my meal plan. These take little time to prepare and require few ingredients that you most likely have in your fridge already. This is perfect for a quick week night supper or casual dinner with friends. Next time I make these I think I will add some feta into burger to give it a little somethin' extra, but it is so flavorful without it as well.
Lamb Burgers with Mint & Tsatsiki
- 2 garlic cloves, minced
- 2 TBSP chopped fresh oregano
- 2 TBSP chopped fresh mint
- salt & pepper
- 1 1/2 pounds ground lamb
- 4 pita rounds, cut in half, toasted (or fresh from the oven!)
For the Tsatsiki
- 1 cup plain yogurt
- 2 green onions minced
- 1/2 English cucumber grated and drained (to drain squeeze the grated cucumber in your hand or paper towel to remove most of the water)
- 1 TBSP chopped fresh mint
- 1 TBSP chopped fresh parsley
- salt and pepper
- a squirt of lemon juice
For the burgers combine first 4 ingredients in a large bowl, and mix well. Add the ground lamb and combine. (do not overmix or your burgers will be mushy) Form 4 1 inch thick patties (you want them pretty flat so they will fit nicely into the pita pockets). Sprinkle with additional salt and pepper. Grill burgers over medium-high heat (I did this on a grill pan on the stove cause it was raining outside) Turn once, 3-4 minutes on each side or to desired degree of doneness. Remove from grill, cover with foil and allow to rest.
For the sauce combine all the ingredients and stir to blend. Keep refridgerated until ready to use.
To assemble place each burger into a warmed pita along with some lettuce, red onion (I caramalized mine), and a dallop of tsatsiki sauce.

Yum! I love Greek food, too - especially with that tsatsiki sauce. OHMYGOSH I would put it on everything if I could.
